Happy June –
Summer is coming (albeit with a little atmospheric foot dragging). We are certainly thinking sunny thoughts….sandals, shorts, sunscreen! Cherries, corn, basil!
Speaking of corn…
Last Cooking Class until Fall:
Summer Corn: Saturday June 19 at 1 pm.
Corn & Seafood Chowder, Corn & Red Pepper Pudding, Corn & Miso Soup, Pastas and Salads with Corn. Yum, fun and more yum.
Cannolicchi Pasta with Corn, Shiitake Mushrooms, Potatoes, Parmesan and Basil
If you’d love some fantastic seafood… Halibut, crab cakes, pan-fried oysters, chowder, shrimp and the last of the spring Chinook salmon. (Then local summer kings.)
Halibut Filet with Jasmine Rice, Grilled Asparagus and Ginger-Soy Butter
We are getting some beautiful local produce from Stockhouse’s Farm. Rob & Diane do CSAs and farmers markets as well as provide your favorite restaurants with great vegetables. Check them out at www.stockhousesfarm.com. Lots going on out on Puget Island.
June Cocktail of the Month
“The Limelight”
A delicious new take on the classic combination of gin and lime. Taste the Limelight and be scurvy-free all month!
Combine in a shaker with ice:
2 1/2 oz Beefeater gin
1 oz lime simple syrup
Shake well and serve up in a martini glass with a sugared rim.
Lime simple syrup: Zest 4 limes into a small saucepan. Juice the limes into a measuring cup. Note the volume of juice. Pour the juice into the saucepan. Add sugar equal in volume to lime juice. Bring to a boil. Remove from heat and allow to cool. Strain if desired. (We like the zest and do not strain it out.) This will easily keep for a week.
ARTWALK: June 10. First artwalk since last September. Come spend a lovely evening at the Port. Stop in for dinner or just a glass of wine and a nibble.
SUMMER HOURS:
Starting on June 22, Pelicano is open 6 nights a week. Tuesday to Sunday. Summer hours last into September.
